Any Texpat can give you a list of things they miss about the Lone Star State. The weather, the football, the music – and near the top of many of these homesick lists: the food. Specifically, a good tortilla. Whether you prefer tacos, fajitas or burritos, there’s just nothing like a great tortilla.

Tortillas

corn or flour
wheat or hatch chile
tortillas are as necessary
as air
and shelter
what else holds so much delight?
what else holds so much surprise?
nothing
that’s what else.
tortillas are the book covers
to explosions of tasty stories
sagas of fajitas traveling the
pilgrimage of your
digestive tract
blankets of spice
keeping you warm
at night
in your belly
(and in your heart – oof)
tortillas, oh tortillas
you are unmatched
in your ability
to hold secret truths
and impart delicious wisdom
upon us
day
and night
