Can you have real Texas BBQ in New Mexico or do you have to make do? Where there’s smoke, there’s Texas Monthly Barbecue Editor Daniel Vaughn. He says Mad Jack’s Mountaintop Barbeque offers appetizing Texas-style brisket.

Vaughn says James ”Mad Jack” Jackson started his barbecue business by opening a trailer in Lockhart. But most Texans known the Central Texas town already has plenty of barbecue options. So Jackson left Lockhart, moved to New Mexico and started over again.

On the weekends, Vaughn says the line at Mad Jack’s is sometimes “far enough that there are people standing in line who are actually standing in front of the other Texas BBQ joint in town.”
