Texas is a big state – and every town has their own twist on tacos. Armando Rayo, veteran of the 2016 Taco Wars and coauthor of the forthcoming book, “Tacos of Texas” is our resident taco journalist. He’s traveled all over the state, savoring local specialities, to compile a look at the best of the best.

“You cannot find a better job in Texas than eating your way through all the tacos.”

We’ve divided the state up into smaller parts to discuss what each city has to offer, so we’ll start towards the south.

What you’ll hear in this segment:

-How puffy tacos are made and where to find them in San Antonio

-Information about Laredo’s signature taco: the mariachi aka. the breakfast taco

-What sets breakfast tacos in Laredo apart from those found in other cities
