Brisket

For Jimmy Baxter

 

It doesn’t matter

The time–

Could be early morning

Lunchtime snack

Or a full dinner

Plate

And that plate could be adorned

With pickles

Onions

Soft thick bread

And all other

Decorative foods

And perhaps

Even 

There’s a dollop

Of luscious sauce

But you know 

The only thing that matters

Is that tender cut

That perfectly smoked

Slice

That melts in your mouth

And makes everything else

Melt 

Away
